Nick & Birdie started The Bistro Box, a mobile food business in January 2010.  They began their wild ride in Florida for the winter, serving up fresh food at art & crafts shows, music festivals, farmers markets & catered events.  They headed back home to New England for their spring, summer & fall seasons.  Life on the road brought them adventure, freedom, business experience....and a few flat tires!  Even though it might have been the hard way,  they experienced four successful years.

  Both graduates of the Culinary Institute of America in the Hudson Valley, Nick's & Birdie's resume vary greatly from high end restaurants to catering and concession. Before the two crossed paths, their culinary talents took them from Nantucket to the Caribbean and places in between.  They also gained  experience working for great local establishments right here in the Berkshires. In the fall of 2013, they spotted a opportunity to settle down in Great Barrington, MA.

  Opening their roadside eatery in April 2014, they'll be serving up a fun mix of classic shack favorites &  café fare.  The Bistro Box will be a fun, outdoor 'drive in style' stop that's great for families with children, local workers on the go, and tourists up for the weekend.  They are focusing on fresh, quality ingredients, served in a quick, tasteful manner with appealing prices.  They look forward to sharing their love of food (and music!) with everyone in a carefree country setting.

When Nick & Birdie aren't cooking up a storm, they enjoy time with family, nights out with friends, outdoor adventures with their Bostie Lita & an occasional getaway!
